The traditional Greek Salad is a very good option but, being very light, it falls a little short if what you want is to use it as a main dish.
For that reason we bring you this version of Greek Salad but with Chickpeas, which is a delicious, nutritious and easy-to-prepare option that combines the freshness of vegetables with the protein and fiber of chickpeas.
It is also very quick and easy to prepare.
Ingredients:
- 1 jar (400 g) of cooked chickpeas, rinsed and drained.
- 1 cucumber, cut into cubes.
- A handful (to taste) of cherry tomatoes, cut in half.
- 150g crumbled feta cheese.
- A handful (to taste) of black olives, pitted and cut into slices.
- 1/2 red onion, finely chopped.
- 1 green pepper, cut into pieces.
- A pinch (to taste) of fresh parsley, chopped.
For the Dressing:
- 50-60ml extra virgin olive oil.
- 2 tablespoons of wine vinegar.
- 1 clove of garlic, chopped.
- 1 teaspoon dried oregano.
- Salt and pepper to taste.
INSTRUCTIONS:
Preparation of Chickpeas:
- Rinse the chickpeas under cold water and drain completely. If you prefer, you can cook dried chickpeas beforehand.
Cutting and Preparation of Vegetables:
- Cut the cucumber, cherry tomatoes, onion, green pepper and olives.
Salad Construction:
- Add the drained chickpeas to a bowl with the vegetables.
- Add the crumbled feta cheese and chopped parsley.
Preparation of the Dressing:
- In a small bowl, whisk together the olive oil, wine vinegar, minced garlic, dried oregano, salt, and pepper. Mix the ingredients well until you obtain a homogeneous mixture.
- If you want, you can add variations to this type of dressing to give freshness and variety to your dishes, such as using soy sauce instead of salt or lemon instead of wine vinegar.
Add the Dressing:
- Pour the dressing over the salad and toss gently to ensure all ingredients are well coated.
Refrigeration:
- Cover the bowl with plastic wrap and refrigerate the salad for at least 30 minutes to allow the flavors to blend.
Serve:
- Before serving, toss the salad again and adjust the seasoning as needed.
